I loveeeeee Chocolate, so much so for my 16th Birthday I went on a chocolate tour around Melbourne. Unfortunately though chocolate doesn’t always agree with my stomach, particularly when it has dairy, oils and lots of refined sugar in it (plus I may eat more than i should…).
So for me, making a more nutrient dense, less sugar containing, no dairy chocolate, was very much needed. This is my go to chocolate recipe, especially great for Easter time to be made for gifts.
Ingredients
1 cup cocoa butter (coconut oil can be used, just won’t set as hard)
1 cup cocoa powder
1/2 cup raw honey or other sweetener (rapadura sugar is always lovely)
Then your choice of fillings, my favourite is cranberry and coconut, however anything you like can be added: almonds, dried figs, cacao nibs, dried orange peal, raisins, quinoa puffs
Method
1. Melt cocoa by double boiling
2. Remove from heat, add other ingredients and mix well.
3. Pour chocolate into moulds or on a lined tray
4. Let harden at room temp for a few hours, cut if needed, then place in the fridge.
